As the weather starts to warm, we are already dreaming of refreshing spring and summer cocktails, with lighter spirits like gin. If you ever found yourself stuck between whether to make a classic gin fizz or the even more appealing corpse reviver, then we have the answer. Follow the rainbow and right at the end is the Pot of Gold. All the fun of a fizz with a little rinse of absinthe to really excite the palate. Plus, no refined sugar and all the sass of our All-Sass riesling blend of grape nectar.

We first reached for California based Benham’s Original Gin because of its outstanding craftsmanship. We love that it is distilled close to where we source our grapes, which gives this cocktail a natural synergy. There are gorgeous flavors from meyer lemon and buddha's hand and floral notes of chamomile and angelica, which pair perfectly with the white floral and bright citrus tones of our All-Sass sugar alternative. Another interesting aspect to this cocktail is the absinthe rinse as the botanical flavors of the absinthe pair harmoniously with the flavors of the gin, acidic lemon, and lush All-Sass California grape nectar.

We chose to use the All-Sass blend of our natural sweeteners, not only for its sassy citrus and white floral notes, but also for the slightly spicy elements that give extra depth in this refreshing cocktail. Due to the simplicity of ingredients in this cocktail, the All-Sass sugar substitute’s complex flavors are nicely depicted. Our riesling blend of grape nectar adds the necessary sweetness while it also cohesively blends with the citrus from both the gin and fresh lemon.

The final ingredient to this flavorful cocktail is the sometimes contentious egg white, which creates the beautiful and delicious foam in cocktails, including this one. If you are in search of a vegan alternative to the egg white, we suggest using aquafaba in its place. Aquafaba is a thick liquid that comes from legumes (such as chickpeas) and works magically as a vegan egg white replacement! Whether you chose to include egg white or aquafaba, both will add a foamy effect that gives a creamy richness you will love.

POT OF GOLD (IN A GLASS) RECIPE

Ingredients

  • 1 egg white
  • 2.5 oz Benham’s Original Gin
  • 0.75 oz All-Sass Grape Nectar
  • 0.75 oz fresh lemon juice
  • absinthe rinse

Preparation

  1. Add all ingredients to a Boston shaker WITHOUT ice. Shake vigorously for at least 1 minute.
  2. Add ice; shake vigorously for 20-30 more seconds.
  3. Rinse a coupe with absinthe.
  4. Strain the contents of the shaker into the glass.
  5. Garnish with a lemon twist.
