Our latest recipe is a fun twist on Cookie and Kate's Blog Pomegranate & Pear Green Salad! We have changed up the salad dressing to incorporate our All-Sass grape nectar in the place of the maple syrup or honey it calls for. We found that the delicious pomegranate, pear, and pecan flavors of this salad are amplified by doing so!

The dressing of this salad is the absolute highlight of the dish. That being said, we sought to make the dressing as delicious as possible by adding our All-Sass grape nectar blend to the dressing. The All-Sass blend enhances the other ingredients of the dressing with its floral notes. It also compliments the pomegranates in the salad with its citrus undertone from the riesling wine grapes it is made from. In addition to all of this, the grape nectar brings out the natural sugars of the apple and pears in this salad. The pecans balance out the sweetness and add texture to pull it all together into one harmonious and flavorsome salad.

Aside from elevating the overall flavor of the salad, adding grape nectar proves to be a healthier alternative to maple syrup or honey. By comparison, grape nectar has half the sugar of honey and half the glycemic index of honey and maple syrup. You will feel even better about dressing your greens knowing that you have made the healthier choice of substituting for our natural sweetener!

 HOLIDAY MEDLEY SALAD

Ingredients

Salad

  • ½ cup raw pecans (halves or pieces)
  • 5 ounces baby arugula
  • 2 ounces (about ½ cup) goat cheese or feta, crumbled
  • 1 large ripe Bartlett pear, thinly sliced
  • 1 Honeycrisp or Gala apple, thinly sliced
  • Seeds from 1 pomegranate

Dressing

  • ¼ cup extra-virgin olive oil
  • 1 tablespoon apple cider vinegar, to taste
  • 1 teaspoon of lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon All-Sass California Grape Nectar
  • 1 teaspoon finely grated fresh ginger
  • ¼ teaspoon fine sea salt
  • Freshly ground black pepper to taste

 

Preparation

  1. Slice all apples and pears and remove seeds from the pomegranate for the salad.
  2. Combine salad ingredients in a large bowl with pecans, goat cheese, and arugula.
  3. Whisk together all dressing components in a small bowl.
  4. Drizzle over the salad and enjoy!
