If you're not a fan of beets, we would highly recommend giving the golden variety a chance. A little more mild in flavor, golden beets are the segway variety to this root vegetable. We like a little assortment of both in our salad to give the dish a sweet, rooty flavor from the golden and a spicy, earthy flavor from the traditional red.
Either way, those bloody beets are loaded with antioxidants and fiber to help you live a healthier life. And our nectars are the perfect healthy sugar alternative to enhance this salad option. BETTER BEET SALAD RECIPE
Ingredients (makes ~4 servings)
- 3 Tbsp Bored-O Rouge
- 1.5 Tbsp red wine vinegar
- 1/2 Tbsp Dijon
- 1/4 cup extra virgin olive oil
- Salt and pepper
- Whisk all ingredients together.
Ingredients (makes 1 serving)
- 1 small red and golden beet
- 1 cup finely chopped kale
- 1 oz crumbled goat cheese (omit for vegan recipe)
- 1 Tbsp pepitas
- 1/2 orange, peeled & segmented
- 1 Tbsp fresh chopped parsley
- Arrange beets over or around kale. Top with remaining ingredients.
- Drizzle 1-2 Tbsp Rosé Dressing over salad.
